This smokey red lentil soup is not only delicious, it's also healthy, filling, and plant-based! Drop into the shop with your containers to pick up your ingredients, and throw this soup together in 30 minutes!
Ingredients
2 tbsp olive oil
1 onion
2 carrots
2 stalks of celery
3 cloves of garlic
2 tbsp smoked paprika
1/2 tsp cumin
1/2 tsp turmeric
1.5 cups red lentils
6 cups vegetable broth
1 can coconut milk
3-4 handfuls spinach or kale (optional)
2 tsp salt
1/2 tsp pepper
juice from 1/2 lemon
2-3 nests of noodles, precooked
Instructions
• Heat the olive oil in a large pot over medium heat, then add in minced onion, carrot, and celery. Cook, stirring often, until soft (roughly 10 minutes)
• Add the minced garlic, smoked paprika, cumin, turmeric, and lentils; stir and let the mixture heat up for a minute or two (don’t let the garlic turn brown)
• Pour in the vegetable broth. Bring to a simmer, and leave for 10 minutes, stirring a couple of times
• Add in coconut milk, salt, pepper, spinach or kale (if using), and lemon juice. Stir in, and once the spinach or kale has softened, use an immersion blender- we like to leave a few chunks for texture
• Cook the noodles then mix into blended soup, and enjoy!
